I am formed as a chef thought combining all my professional experiences.

From a young age it was evident that I had a passion for cooking.

Overtime I opened my first business in Paris and I was very proud.

I climbed the ladder then opened three restaurants in Bordeaux keeping my personal touch.

Now it’s an honor for Victorine and I to share my culinary passion with San Diegans.

The restaurant is a tribute to Louisa, Thomas’ grandmother, and his kitchen that remains in our memory.

Since the age of 14 years old, I was convinced that restaurant work would be my furure.

Encouraged by my mother and my uncle (who was a cook in “La Tour d’Argent” in Paris), I got my first experience in the kitchen and am graduate.

But Contact with people was indispensable to my development.

I finally found my happy place in the front of the house. Customer service was pleasant and rewarding wich allowed me to evolue in my profession.

Thomas and I share our passion for this business and wish to harness our experience from France to create something beautiful in San Diego.
